Zucchini Brownies

I've got some frozen grated zucchini and I think I'm going to pull it out and make these delicious brownies. I'm feeling nostalgic.

2 cups grated zucchini
1 ½ cups sugar
1 egg
½ cup oil
2 cups flour
¼ cup cocoa
½ tsp. salt
2 tsp. vanilla
1 heaping tsp. baking soda
½ cup chopped nuts

Mix together and bake in a greased 13x9 pan at 350 degrees for 30 minutes.

Frosting:

¼ cup butter, melted
2-3 T. cocoa
2 cups powdered sugar
1 T. milk (or more if needed to achieve desired consistency)
1 tsp. vanilla

Melt butter, then add and dissolve cocoa. Add powdered sugar, milk, and vanilla. Stir to combine. Add more milk if needed to achieve desired consistency. Frost cooled cake.

  1. Another great Grandma Yancey recipe! We usually only have these in the summer. What a great idea to freeze the zucchini and have them in the winter (when we're not absolutely disgusted every time we see ANOTHER zucchini growing prolifically on the plant!).

  2. LOVE these! :) I've made them on multiple occasions this summer to share with friends and co-workers, and everyone is always so impressed that there is zucchini in them! They are SO good! :)
